How to Make a Bubbly Vegan Chocolate Mousse Using the Magic of Chickpea Juice
So if you’re not in it already, go and join the ‘Vegan Meringue, Hits and Misses!’ Facebook group. It’s a constant pendulum swinging between the most indulgent food porn you’ve ever seen, and well – epic kitchen fails. I love it. And the members are really friendly, which is almost unheard of in Facebook groups 😉
After admiring the ‘Hits’ and chuckling/commiserating at the ‘Misses’ for some time, I finally decided to pop my aquafaba cherry and jump into the arena myself.
“What on earth is Aquafaba?!” I hear you cry!
Well, at the risk of making this recipe sound absolutely disgusting, it’s bean juice.
Yep – you know that weird-smelling liquid in your can of chickpeas? Well, you’ll never pour it down the sink again after you figure out the magical things it can do. I don’t know what the person who discovered this was thinking – but I applaud them. Whip that stuff up and you can make vegan meringues, egg-replacers and all manner of scrumptious delights.
A very kind member of the Facebook group recently posted a simple and yummy looking chocolate mousse, with a link to the recipe. It seemed simple enough, and I already had all of the ingredients in my cupboard (except the sugar), so that convinced my lazy self that it was worth a try.

It’s not the healthiest of treats, but hey – I have my non-vegan brother living with me right now, and anything I can do to get him to enjoy vegan food, I’ll do it. He demolished this and asked for seconds – so I’m thinking it was a success.
Top tip: The mousse is really rich, so a small serve per person is best. You might want to add slightly more coconut cream or a less dark chocolate if you want it to be more creamy and ‘milk chocolatey’. I would also recommend either an electric whisk or a strong set of muscles. It took me and my (personal trainer) brother quite some time to get the aquafaba to make ‘stiff peaks’. He was cursing me until he finally tasted the result…
